BANANA OATMEAL MUFFINS

Hi guys!

I recently posted a picture of my baking spree on Instagram that has resulted in delicious Banana Oatmeal Muffins. A lot of you guys asked for the recipe so here it is. Enjoy!!

I made these muffins to put my mind onto different things. These attacks in Brussels have really touched me, especially since I work at Brussels Airport and my colleagues have been hurt. Some of them severely injured and seeing al those movies and pictures on the internet doesn’t really help me. So, I wanted to get my mind off these horrible things and started making muffins.

These muffins are nutritious, without refined sugars, full of fiber and can be used as a snack or as a breakfast to go.

Ingredients

serves 12 muffins

  • 2 1/2 cup old fashioned oats
  • 1 cup low fat Greek yogurt / low fat quark
  • 1/2 cup honey / agave syrup
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1/2 tsp cinnamon (optional / you can replace the cinnamon with any other heb you would like or chocolate chips / blueberries / …)
  • 2 eggs*
  • 2 ripe bananas

 

How to

Preheat the oven to 200°C or 400 F. Spray muffin-tin with a small amount of cooking spray, when you use a silicon one there is no need to use the oil. You can also use foil liners to replace the cooking spray. Combine all the ingredients together in a bowl and mix with a blender. Blend until smooth (not too bad if you have larger oatmeal chunks). Divide the batter among the muffin liner (when using blueberries or chocolate chips, now is the time to add them to the already divided batter!) and bake for 15-20 minutes or until toothpick comes out clean. Let cool on a steady even surface and try not to eat them all at once ;-).

* Egg replacement

If you need an alternative to eggs, consider making flax eggs. To make the equivalent of one egg, grind 1 tsp of whole flax seed into a fine powder. Do not use pre ground flax meal!!
Add 3 tbsp of water. Whisk together with a fork. Refrigerate for at least 15 minutes. You can make more an one at a time.
