Here I am again with a new recipe. One that takes about 15-20 minutes to make. If that ain’t handy for a quick lunch/dinner.
Ingredients (1 serve)
1/3 zucchini (cubes)
1 carrot (cubes)
1/2 red onion (diced)
1 garlic clove (crushed and diced)
1 spicy red pepper (seeded if you want it less spicy)
Red chili flakes to taste
Pepper & salt
Small hand fresh basil (chopped)
100 grams thawed shrimps
60 grams uncooked 4 grain couscous
Prepare all the vegetables and clean your shrimps. Use around 90-100 ml water / low salt vegetable (optional) stock to prepare your couscous. Bring water to a boil. In the meantime sautée your vegetables with the red spicy pepper. When the water is boiling add in some low salt vegetable stock and the couscous. Once ready fluff with a fork. When veggies are sautéed add in the shrimps and season with pepper, salt and red chili flakes. Finish off with fresh basil. Stir well and add in the couscous. Ready to serve.
