We all have those days we want to eat healthy but are too lazy to make decent food. Well, Albert Hein -a Dutch grocery chain- has found something to fix that problem: Soup packets. Yes you heard that correctly, soup packets. Fresh vegetables to make soup. How handy is that? Is it yummy? Let’s find out together!
Sweet potato soup, a spring classic according to the packaging. It has enough vegetables to make soup for six people. I had some more servings because I don’t really like thick soups.
The vegetables for this soup are:
- 1 sweet potato
- 2 red peppers
- 2 red onions
- 3 cloves of garlic
- fresh parsley
- 2 stock cubes
- 3 carrots
There are no descriptions written on the packaging so you have to figure out yourself how to make the soup. I kinda guessed with the amount of water I had to add. Luckily, I guessed right! Hurray for the ginger girl!
You can use butter, olive oil, coconut oil or whatever you like to make the soup. My options are always olive oil or coconut, keeps the dish healthier!
Clean and cut up your veggies. Sautée for about 10 minutes. Add in the water and stock cubes -I switched the included ones for low salt ones- and leave to cook for about 20-30 minutes. Take your blender en blend until smooth. Season with pepper and salt until your are satisfied.
Finish up with some fresh parsley when ready to serve.
