Hi guys!

I’m back on track with my workouts and healthy food. This means new recipes for you all, HURRAYYYYY, and more food for me! Like I always say, healthy food does not mean it’s not yummy. Experiment and see what happens. But if you have a day you don’t want to do much dishes, I’ve got the recipe for you.

This dish is easy, healthy and extremely delicious. My mom was begging me to make this more often so it’s a big succes!


  • 1 zucchini
  • 2 big winter carrots (4 carrots in the size of 2)
  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 2 red onions
  • 3 cloves of garlic
  • 4 small potatoes
  • 3 medium sweet potatoes
  • Freshly ground pepper
  • Sea salt
  • Fresh rosemary
  • Fresh thyme
  • White fish fillet

How to:

Preheat your oven to 200 degrees Celsius. Clean and cut all the vegetables in small squares (brunoise). Add the vegetables and potatoes in an oven proof skillet. Add some twigs of thyme, rosemary, freshly ground pepper, sea salt and your crushed cloves of garlic to the skillet. Add some olive oil to the vegetables and mix well.

Place in the oven and let bake for about 20 minutes. Stir well during these 20 minutes.

In the meantime, season your fish with the same herbs minus the garlic. Place on top of the roasted vegetables and let bake for another 10-15 minutes depending the cooking time.
