It’s Sunday morning and this is the perfect day to have pancakes. I know, they are ‘unhealthy’, right? Well, guess again! I’ve got the perfect recipe for you.
Makes 1 serving
- 20 grams of old fashioned oats
- 1 banana (the riper the better)
- 1 tbsp low fat cottage cheese
- 1 egg
- 1 tsp cinnamon (or more if you want)
- 1-2 small drops of vanilla extract
- Coconut oil to bake the pancakes
The recipe is really simple! Take a small bowl and add all of your ingredients, except for the banana. Chop your banana in smaller pieces and add to the bowl. Take a blender and mix everything. Put on a pan on medium-high heat with a tiny bit of coconut oil. When warm, add the batter (small amounts or the pancakes will break) to the pan and bake until the batter has dried up and flip over.
Put the pancakes on a plate and drizzle with honey, Nutella, peanut butter or anything you’d like. You can also add chopped walnuts or pecans.
